Neapolitan pizza "Da Michele"

1k flour 00
500ml of water
30gr salt
5gr yeast

add water yeast and salt
add the flour slowly
kneading 40minutes (maybe add some extra water)
leave the dough for 12-24h
cutting to 300gr per piece
let them rest for 4-5h
