Mattia's Carbonara
Mattia's Carbonara
Ingredients (for 500gm of pasta) :
- 8 eggs
- Grated parmesan (a lot)
- Pancetta or Pork Belly or Bacon
- Salt
- Pepper
Procedure:
- Cook the pasta
- Shop pancetta in little pieces and cook it, after ready let it cool down.
- Mix 6 egg yolks and 2 full eggs with a bit salt and a lot pepper, add the parmesan, mix until it becomes a cream
- Take the pasta out, and let it cook for 1 minute, save some water from the pasta
- Mix the sauce with the pasta and add a bit of water
- Serve with parmesan on top
